Basic recipes for the Zojirushi BBCC – V20 bread machine. The recipes below make a 2-pound loaf.

Instructions for basic bread baking in the machine

  1. Remove the baking pan from the machine by tilting it toward you.
  2. Attach the rotating blades.
  3. Add listed ingredients in the following order: water, flour, sugar, dry milk, salt, butter, yeast. IMPORTANT: The yeast should not touch liquid ingredients.
  4. Add the baking pan back into the machine, and plug in the machine.
  5. Select course to “Basic” or “Quick.”
  6. Press “Start.”

Basic White Bread

  • Water — 1 1/2 cups
  • Bread flour — 4 1/4 cups
  • Sugar — 3 tablespoons
  • Dry milk — 2 tablespoons
  • Salt — 1 1/2 teaspoons
  • Butter — 2 tablespoons
  • Yeast — 2 1/2 teaspoons

100% Whole Wheat Bread

  • Water — 1 7/8 cups
  • Whole-wheat flour — 5 cups
  • Sugar — 3 tablespoons
  • Dry milk — 2 tablespoons
  • Salt — 2 teaspoons
  • Wheat gluten — 4 tablespoons
  • Butter — 2 tablespoons
  • Yeast — 2 1/2 teaspoons

Whole-wheat Sandwich Bread

  • Water — 1 2/3 cups
  • Olive oil — 2 tablespoons
  • Bread flour — 3 1/2 cups
  • Whole-wheat flour — 1 1/2 cups
  • Sugar — 2 tablespoons
  • Dry milk — 2 tablespoons
  • Sea salt –1 1/2 teaspoons
  • Yeast — 2 1/2 teaspoons

Rye Bread

  • Water — 1 1/2 cups
  • Bread flour — 4 1/4 cups
  • Sugar — 2 tablespoons
  • Salt — 1 1/2 teaspoons
  • Butter — 2 tablespoons
  • Caraway seeds — 1 tablespoon
  • Yeast — 2 1/2 teaspoons

Pumpernickel Bread

  • Water — 1 2/3 cups
  • Bread flour — 2 1/3 cups
  • Whole-wheat flour — 1 cup
  • Rye flour — 1 cup
  • Molasses — 3 tablespoons
  • Salt — 1 1/2 teaspoions
  • Vegetable oil — 2 tablespoons
  • Cornmeal — 4 tablespoons
  • Instant coffee — 2 teaspoons
  • Cocoa powder — 2 tablespoons
  • Wheat gluten — 5 tablespoons
  • Yeast — 2 1/2 teaspoons

7-Grain Bread

  • Water — 1 1/2 cups
  • Bread flour — 4 1/2 cups
  • 7-grain cereal — 2/3 cup
  • Sugar — 2 tablespoons
  • Dry milk — 2 tablespoons
  • Salt — 1 1/2 teaspoons
  • Butter — 2 tablespoons
  • Yeast — 2 1/2 teaspoons

Raisin Bread

  • Water — 1 1/2 cups
  • Bread flour — 4 1/4 cups
  • Sugar — 3 tablespoons
  • Dry milk — 2 tablespoons
  • Salt — 1 1/2 teaspoons
  • Butter — 2 tablespoons
  • Cinnamon — 1 teaspoon
  • Yeast — 2 1/2 teaspoons
  • Raisins — 1 cup (add when beep sounds during knead step)
